Vegetables are our friends.


I may be biased on my own blog, but I think that is one good looking dinner. As delicious as it was colourful, it hit all the right notes for lunch. What is it about brightly coloured food, why does it make you feel so wholesome and healthy? It seems eating a rainbow is good for the soul.
Imagine a plate of nosh in tones of beige or cream, possibly rice, pasta or potatoes. What do you think? Comfort food. Now imagine a plate with reds, purples, oranges, yellows and greens. This equates a healthy dinner, (unless you're eating these colours artificially, then it would definitely be comfort). I don't understand people who never eat vegetables or only the frozen bland kind, or even worse, from a tin. They are cheap as chips, healthy and tasty if you cook them with imagination. I am not on a one woman mission to promote vegetables, don't worry, just admiring the lovely lunch I enjoyed with a cornucopia of brightly coloured gems.



Recipe : Pork and seven treasure stir fry
1/4 lb pork loin, sliced thinly
2 tsp peanut oil
1 clove garlic, sliced thinly
A 1/2 inch piece of ginger, sliced thinly
4 stalks of broccolini, florets separated and boiled for a few moments
6 stalks of baby bok choy
1/2 bell pepper, thinly sliced
1/4 small red cabbage, thinly sliced
A handful of spinach
A handful of red mustard leaves
2 chive flowers, broken apart
Sauce
1 tbsp soy sauce
1/2 tbsp Chinese wine
1 tsp Sriracha or other hot sauce
1/4 tsp sugar
A little salt
1/4 tsp sesame oil

Heat the oil in a wok or frying pan over high heat and when hot, quickly fry the garlic and ginger for 30 seconds.
Add the pork and fry until it is browned, then remove to a paper towel lined plate. 
Add a little more oil if necessary, then add all the vegetables.
Stir fry for a few moments to cook and soften some of the veg such as the cabbage, but don't cook too much, you want them to retain some bite.
Add the sauce ingredients and stir well, then add the pork back to pan. 
Mix everything together well to heat through. Serve and be dazzled by your creation.
